Luscious Veggie Fry Back to Recipes

This dish is tangy with lycopene-rich tomato,
tender with mushrooms rich in selenium, crunchy with water chestnuts and all around delicious. It can be made
completely vegetarian or with thin strips of steak or chicken if
desired.
You'll need:
Chicken or vegetable stock
Carrots
Stewed tomatoes
Mushrooms
Water Chestnuts
Bamboo Shoots
Green Beans
Broccoli
Cheese
Salt, pepper, garlic and paprika
In a
large non-stick skillet heat 1 cup of low sodium chicken or vegetable
stock. Simmer with 1 cup of sliced carrots or baby carrots for several
minutes to soften carrots. Add one can of stewed tomatoes, 5-7 sliced
mushrooms, one 4 oz can of sliced water chestnuts and one 4 oz can of
bamboo shoots. Add a handful of fresh green beans and broccoli
florets. Season with salt, pepper, garlic and basil to taste. Add a
teaspoon of paprika and stir to combine all flavors. Cook until the
liquids have reduced and top with mozzarella cheese to melt. |
